Low Carb Toast with Grilled Vegetables
- Ingredients for 2 portions
- For the veggies:
- 200 g zucchini
- 100 g eggplant
- 100 g red bell pepper
- 15 ml olive oil
- Salt and pepper, to taste
- For the toast:
- 2 Lizza Toast Squares
- Your choice: Lizza Tomato Sauce, Pesto, or Spread
Preparation: 15 minutes
Cooking time: 5 minutes
Instructions:
- Wash and cut the veggies into slices.
- Brush the veggies with olive oil and season to taste with salt and pepper.
- In a grill pan grill the veggies for 3 minutes per side (only 2 minutes for zucchini).
- Cut Toast Squares in half and apply your favourite spread.
- Arrange eggplant, peppers, and zucchinis on the bottom Toast Square half, close with the top half and serve.
